Kasper's Sunday Slop

INGREDIENTS

1 - 32oz bag -  diced hash browns or homemade potatoes

4-6 -  large eggs

1/2 -  large green pepper

1/4 -  large red pepper

1 -  medium sweet onion

2 -  hot dogs or choice of meat

1 1/2 cups -  (12oz +/-) shredded cheddar jack cheese

1 tsp -  white pepper

1/2 tsp -  crushed black pepper

smidgin of cumin

1/4 tsp -  salt

COOKING INSTRUCTIONS

Use a large electric skillet or large fry pan of your choice.  Coat pan with cooking oil, approximately 2 oz. and preheat the oil.  Dice the onion, red pepper, & green pepper and blanch in the skillet with hot oil.  Pour in the bag of potatoes, using caution with the hot oil and the moisture from the potatoes (they will spit).  Mix everything-up thoroughly and sprinkle on the cumin, salt, black pepper, & white pepper.  Cover the potatoes and cook covered, occasionally turning until tender.

While this is cooking, dice the LazyBones Honey Glazed Ham (or other meat substitute) and spread around in the skillet, about half way through cooking 'til tender.  When the potatoes are crisped to your liking, pour the beat eggs evenly over the mixture in the skillet.  Spread open the potatoes ever-so-carefully with a spatula to let the eggs soak down into the mix.  Cover, and let the eggs continue to coagulate.  Turn the potatoes around a couple of times to let the eggs set-up thoroughly.  The less you turn, the fluffier the eggs and the mix will be.  Just before you're ready to serve, spread the shredded cheese all over the top and cover for several minutes to let the cheese melt.

Uncover, serve, and SLOP!!!

A NOTE FROM KASPER....

When making the slop every Sunday, variation is the key to keeping the kid's happy.  I sometimes replace the dogs with crumbled bacon....or for a real treat, I'll take 1/2 can of SPAM, dice that up, & watch my wife go nuts - She likes SPAM ALOT!
Give it a try.  The more pepper you use, the more zing.
